Lily’s Handmade Ice Cream is coming to Boynton Beach after reaching dreamy success in Delray Beach beginning in 2020 and expanding earlier this year to North Miami Beach. They aim to open the new restaurant at 3837 West Woolbright Road on Friday, Nov. 14.
Featuring small batch, kosher ice cream with incredibly-creative flavors and equally-creative names, Lily’s is a family affair all the way. Father Ronen Gilinsky oversees the business side, his son Tal runs the day-to-day operations, Tal’s brother Ori is the wonderfully-mad scientist behind that ice cold deliciousness and the entire operation is named after daughter/sister Lily.
Ori is a skilled pastry chef but it turns out he has no formal training in the art of making ice cream. He simply enjoys the ice cream side of dessert, so he watched endless videos and invested countless hours experimenting with flavor combinations, ingredients, and products. With time, Ori developed his own style and has taken it to the next level.
“He’s the genius, he’s the one behind the scenes,” Ronen said. “We’re so impressed… give him a minute and he’ll come up with something great.”
Lily’s makes all their ice cream by hand and uses “16 percent butterfat, the richest you can get,” Ronen said. “If we’re going to make the best, we have to start with the best.”
Lily’s uses no artificial coloring and no stabilizing agents. The ice cream is sweetened with cane sugar instead of corn syrup and mostly contains organic ingredients.
For vegan options, Lily’s uses an ultra-rich coconut base that most people can’t even tell that it’s vegan, Ronan said. There are also dairy- and gluten-free offerings.
Some of those awesomely-named flavors include Dusty Monkey, a brown sugar-infused banana ice cream studded with Biscoff cookies; SoFlo Swamp, chocolate ice cream with Oreo cookies and chocolate chips; Fairy Floss, cotton candy ice cream with rainbow sprinkles and frosted Animal Crackers; and Wolverine Delight, cake batter ice cream with brownies, sprinkles, and cookie dough.
Those four are part of their 12 signature flavors which they carry at all times. They also offer four rotating flavors that change monthly and allow Ori to experiment.
Are Lily’s 12 signature flavors likely to ever change? Ronen sounded doubtful. “We have a lot of customers that are addicted to those flavors.” So much so that he added “I wish we could expand and send them up north” for their fans who are seasonal residents and eventually head back to New York and New Jersey.
All of Lily’s flavors can be enjoyed in a cup or house made waffle cone or in one of their sundaes like Gator Tracks or Worms & Dirt.
“Lily’s was born out of a deep love for ice cream and a desire to create something truly original, fun and delicious,” said Ori. “We’re excited to share our passion with the fine folks of Boynton Beach and hope they embrace Lily’s with the type of warmth and support we’ve been blessed to find in Delray Beach and North Miami.”
