Owner Nevah Cheth said the restaurant will offer a menu of burgers and seafood. She said she is aiming for a July 4 opening. In the meantime, she is cleaning up the location and waiting for approval from the Wichita City-County Health District.

Cheth lives in Duncan, Oklahoma and also operates a restaurant in nearby Marlow, Oklahoma.

The menu posted on the Ruby City Facebook page shows a menu ranging from burgers in various sizes to fish baskets and a large selection of Asian entres.

The restaurant’s hours will be 11 a.m.-9 p.m. Sunday through Thursday and 11 a.m.-10 p.m. on Fridays and Saturdays.

The space has been vacant since the Highlander closed in August 2024.
