Theo’s Pizza expands as Sheboygan OKs food truck hub, coffee roaster

SHEBOYGAN – Updates on a pizza restaurant expansion and a new coffee roaster on the city’s south side are among recent business updates.

Conditional use permits granted at an April 14 City Plan Commission meeting for businesses gave permission to expand retail to a new building, establish a homebase for a food truck and begin coffee roasting.

Theo’s Pizza and Catering, 3329 S. Business Drive, received conditional use permit approval to add a retail store in the former Art’s BBQ building, 2329 S. Business Drive. The application said this expansion would help Theo’s add wholesale and storage, so the business could partner with local grocery stores to sell frozen pizzas.  

Dough, sauces and toppings made off-site will be assembled at the new retail location, similar to the pizza restaurant down the street.  

Harvest Street Food Truck anchoring at a new building

Harvest Street Food Truck also received approval to utilize a commercial kitchen for food preparation and park the food truck at a former auto repair shop, 1821 Cooper Ave.  

Harvest Street purchased the building from Van Wyk Auto for $153,000 earlier this year, property records show.  

When the food truck isn’t selling at food truck nights, community events or private events, it will sell food from the property’s driveway, possibly with a few outdoor tables for customers, according to the application.  

The food truck, founded by owner and chef Marc Luecke, brings a twist to American street food, like beer tacos, asparagus grilled cheese, and cheese curds and jam.  

Coffee roaster operating out of former Longhouse Axe Bar space

Trail Magic Coffee Roaster received approval for coffee roast production in a 400-square-foot space, formerly utilized as a commercial kitchen, at 1133 Indiana Ave. The building, previously occupied by the Longhouse Axe Bar, also houses Dice Dungeon.  

Owner and roaster Gerald Poss Jr. plans to roast on Mondays and Tuesdays to deliver and sell at farmers’ markets the rest of the week. The process, which is closed to the public, roasts 3 pounds of coffee per batch.
