New ramen shop proposed for former Tangled space on Marquette campus

The space on Marquette University’s campus that was once home to Tangled Noodles has sat empty since the restaurant moved in 2023, but a new ramen restaurant has been proposed to take its place.

Zeong Holding LLC filed a restaurant license application with the city for Tesshin Ramen at 1404 W. Wells St. on July 14. The application lists a proposed opening date of December 21, 2026. Owner Shouyi Jiang said he is optimistic the restaurant can open by that date, but it might be delayed by construction.

Jiang used to run Jin’s Sushi Seafood & Bar and was a partner in the new downtown conveyor belt sushi restaurant, Sooshibay. Jiang said he doesn’t think there are any good ramen restaurants near Milwaukee, and Tesshin aims to change that.

“I have a very high expectation for ramen dishes because I love ramen. I can eat ramen every day, three meals a day,” he said. “In Wisconsin, there’s no ramen that would excite me.”

In preparing to open Tesshin, Jiang traveled to Japan for seven days, eating at more than 20 different ramen shops. Then he visited California, where he tried nine more.

The menu attached to Tesshin’s application also includes common Japanese fare like gyoza, takoyaki, and karaage. It also will serve rotating seasonal dishes such as chashu natto don — seared pork belly and fermented soy beans over rice.

A virtual walkthrough of the proposed restaurant shows a walk-up ordering counter, banquette tables and standard dining tables. Jiang called the dining room “elegant, but still casual and comfortable.”

Jiang said Tesshin is excited to welcome nearby Marquette students.

“I would like to educate them and set a standard for them, so in the future, whenever they want to go to other ramen restaurants and they taste it, they say, ‘It’s not as good as Tesshin,’” he said.

According to the license application, the restaurant will be open 11:00 a.m. to 9:30 p.m. Sunday through Thursday and 11:00 a.m. to 10:00 p.m. Friday and Saturday.
