Here are the new restaurants, shops expected to open in Lubbock 2026

The year has barely started, but Lubbock is already expected to see several new restaurants and shops open in 2026. Here’s what we know so far about what will open in the Hub City, from banks to bakeries.

American Bank of Commerce

What: While the bank has had a temporary location since April 30, ABC’s building is expected to be finished in 2026.

When: Summer 2026.

Where: 11008 Slide Road.

Capra Bank

What: This bank opened a temporary office, but expects to move into the finished building some time in 2026.

When: 2026.

Where: 12115 Slide Road.

El Pollo Loco opening in former Wienerschnitzel location

What: El Pollo Loco is a California-based restaurant franchise specializing in chicken marinated in citrus and grilled over an open flame. Palmetto Assets, LLC., will be the franchisee for Lubbock. Palmetto also operates several Wienerschnitzel restaurants in the city.

When: Spring 2026.

Where: The former Wienerschnitzel at 7102 Quaker Ave.

GECU Federal Credit Union

What: The El Paso-based credit union broke ground on its first out-of-El Paso location in November. An opening timeline was not given.

When: Possibly 2026.

Where: 5035 Milwaukee Ave. 

Goodwill to add three stores, career center

What: Goodwill Industries of Northwest Texas confirmed it will open three stores and a new career center. The first, at 11703 Indiana Ave., will cover 19,000 sq. ft. of retail space, along with having a donation drop-off center.

When: 2026, timeline not confirmed.

Where: 11703 Indiana Ave. Locations for the other two stores and the center have not been announced yet.

Kleines Deutschland German Imports online snack shop

What: This shop, starting online, will offer German snacks and drinks, including candy, coffee, pretzels and Mozart chocolates.

When: Jan. 3.

Where: Online at first, could potentially become a storefront.

Layne’s Chicken to open two locations in 2026

What: Lubbock’s C5 Restaurants group, which operates Fazoli’s in West Texas, added a 44-unit deal with Layne’s Chicken. This restaurant franchise prides itself on high-quality chicken tenders made to order.

When: The University Avenue location is expected to open in March. The 19th Street restaurant will open later in 2026.

Where:  7902 University Ave. and 2227 19th St.

Mobility City

What: Mobility City is a retail franchise that focuses on providing medical mobility equipment, including wheelchairs, lifts, scooters, bathroom safety equipment and hospital beds. Its locations offer repair, delivery and installation services. 

When: Fleet begins in January, store to open in mid-February.

Where:  5044 Frankford Ave., Suite 400.

Ocho 80 Mexican Restaurant

What: Ocho 80 started in Midland in 2022, showcasing Nayarit cuisine of northern Mexico in a sports bar environment. This Mexican restaurant, with locations in Plainview and Midland, listed a Lubbock location for early 2026.

When: Early 2026.

Where: 7517 82nd St.

Paris Croisserie Bakery & Cafe 

What: This bakery has been active on social media, posting photos of various croissant creations and treats. An opening has been hinted at since the fall of 2025, but potential fans are still waiting on an announcement.

When: Possibly early 2026.

Where: 7610 Milwaukee Ave. #300.

Peter Piper Pizza

What: First opened in Arizona in 1973, this pizza chain prides itself on a made-from-scratch menu.

When: Late April.

Where: 6003 Slide Road.

Portillo’s

What: This restaurant chain is known for Chicago street food, including Italian beef sandwiches, hot dogs, burgers and chocolate cake.

When: January of 2026.

Where: 5031 Milwaukee Ave.

Small Sliders to open in Canyon West shopping center

What: Smalls Sliders, a cheeseburger slider concept that began in Louisiana, offers sliders, shakes, and seasoned waffle fries.

When: Summer 2026.

Where: Canyon West shopping center.

The Alibi Coffee House

What: From Carlsbad, New Mexico, this new coffee shop offers coffee, energy drinks, lemonade and cake pops in its other locations. A Lubbock menu has not been released.

When: Early 2026, no opening date announced yet.

Where: 4726 Woodrow Road, Suite 111.

Woody’s Pizza & Bar

What: After being closed for a year, the family-owned Woody’s Pizza is set to return with pizza, wings and live music in a new location.

When: March.

Where: 2608 Salem Ave.
