The largest bacon, egg and cheese sandwich in New York was unveiled May 17 as part of Yonkers Arts Weekend.
The 20-inch creation — on an everything bagel — was masterfully put together by Mamaroneck’s Brooklyn Bagel & Coffee Company in collaboration with social media influencer AJ Chiarella, of the 914 Collective and Yonkers Brewing Co., which provided the fillings: 150 eggs, 10 pounds of bacon and a pound of cheese.
Brooklyn Bagel Founder and owner Pete Voyiatzi started the boiling, seeding and baking around 7 a.m. May 17 using 22 pounds of dough. The process to make a bagel that large, he said, takes 12 hours “because you have to allow for its slow fermentation, known as cold proofing.”
Voyiatzi, who’s used unbleached and unbromated flour for close to two decades (a hot topic at the moment), added how proud he is of his company’s “traditional, old-fashioned bagels.”
“We wanted to make a giant tribute to the real New York bagel, built on tradition, not trends,” he said. “So we made one as big as our pride.”
Added Chiarella: “This is an idea I’ve had for a long time, and I’m really excited to finally make it happen. The BEC is a cultural staple of New York, and Yonkers is the perfect place to put it on a pedestal.”
After the bagel was completed in the kitchen of the Yonkers Brewing Company, it was wheeled out to the nearby Yonkers Waterfront, where it was unveiled, cut into pieces, and distributed to those gathered along the waterfront.
John Rubbo, owner of Yonkers Brewing Co. said doing something “over the top” and fun for America’s 250th birthday was another incentive. “Thanks to Mayor Mike Spano for continuing to make Yonkers Arts Weekend such a great event for our city,” he said.
Spano, who lent a hand in the kitchen as the bagel was completed said, “This is a lot of fun, it tastes good, smells great, it’s a lot of eggs, and it’s nice to be able to break the record here in Yonkers.”
