Tabor Hill Winery & Restaurant announces new menu and head chef

BUCHANAN — Starting Aug. 1, Tabor Hill is scrapping its old menu and entering a next era as the winery and restaurant debuts a brand-new dinner menu whipped up by its new head chef.

Most recently recognized by Wine Enthusiast Magazine as one of the Best Winery Restaurants in the World, Tabor Hill has spent nearly six decades proving that Michigan’s Lake Michigan Shore is capable of producing wines, and culinary experiences, that stand alongside the finest in the world, the winery said in a press release.

Known for creating “thoughtful, ingredient-driven dishes,” according to a press release sent to local media, chef Justin Carlisle is shaking things up at Tabor Hill by celebrating regional flavors, seasonality and farm-to-table.

“Raised on small beef farm in rural Wisconsin, Carlisle developed an early appreciation for food and hard work,” according to the press release. “As chef and owner of Ardent in Milwaukee, he earned national recognition, including a James Beard Award nomination for Best Chef Midwest, for his modern approach to Midwestern cuisine.”

The James Beard Awards recognize exceptional talent and achievement in the culinary arts, hospitality, media and broader food system, the award program’s website said.

The new menu that’s been designed by Carlisle is described as being inspired by the seasons, according to the Tabor Hill website, and crafted with locally sourced ingredients to reflect the restaurant’s culinary vision and celebrate the flavors of Southwest Michigan.
