SPRINGFIELD, IL – One month into opening, Corona Galaviz says he and his team have learned a lot, worked a lot and felt a lot of love back from customers and friends at his new restaurant Crowns Pub and Grill.
“I’ve been doing business in the area for the past 17 years and thought it was a good spot to have a restaurant,” Galaviz said. “We want to appreciate all the people who have shown support to us and work hard to get it down.”
Galaviz told The State Journal-Register in May his intentions to open up an American themed restaurant, and his promise was made true on July 7 when the business officially opened.
Galviz said there have some bumps in the road, but has appreciated feedback from customers online and said the business is continuing to grow.
“We are improving every day and thankfully and thank them for their honest opinions,” Galaviz said. “We will work to get everything taken care of. … The only way you can know how to improve something is if someone tells you – and we’re listening.”
The restaurant has a little bit of everything for everyone, Galaviz assured. From omelets to horseshoes and wraps, no matter a senior or a child there will be something that catches a customer’s attention.
Breakfast, lunch, dinner and alcoholic drinks can all be ordered on the same menu, with prices ranging from $10.99 for an entree all the way up to $34.99 for certified angus beef ribeye dinners.
General manager Juan Ortega brings 10 years of experience in the hospitality business, while chef Jerry Cruz brings 27 years of experience working in popular kitchens like Motorheads, Sweet Basil Cafe, Charlie Parkers and Sapori’s.
Originally buying the building last year, Galaviz initially intended to rent the space out to a tenant, but after several months of waiting decided to bite the bullet and run his own restaurant instead.
The restaurant takes up the space where Dew Chilli Parlor used to be at 2690 S. Dirksen Parkway; drinks and food are served from dawn until dusk with hours from 7 a.m. to midnight Monday through Thursday and until 1 a.m. Friday and Saturday. The restaurant closes at 9 p.m. on Sundays.
Inspirations for the menu come from different parts of America that Galaviz has traveled to, from Las Vegas to the sunny Gulf of Mexico near Alabama.
And added it to his menu, like his take on a Bloody Mary with lime inspired by the food of Alabama.
The name of the restaurant’s inspiration? “Crown” also comes from something important to Galaviz, his grandfather, who was also a Corona.
“We are glad to give service,” Galaviz said. “We like to innovate.”
