New Peoria business opens with beer, cocktails and elevated food

PEORIA – The roar of conversation filled Analytical Brewing during its final soft opening event on Feb. 9 as people gathered to check out the Warehouse District’s newest drinking and dining establishment.

Samantha Graves, director of operations for the Lexington-based brewery, said the goal is to offer “a comfortable space that focuses on creating intentional connections.”

On Feb. 10, Analytical Brewing opened its newest storefront. The larger space allowed the business to build upon what is offered at its Lexington location. Peoria customers can find cocktails and food, along with a wide selection of craft beer.

Where is Analytical Brewing located?

The business’ Peoria storefront is situated in the Adams Street Center at 831 SW Adams St.  

What are the hours at Analytical Brewing?

Hours of operation are from 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Friday and Saturday.

What’s on the food menu?

The menu features handhelds, small plates, appetizers and desserts.

During soft openings, Graves said the Analytical Burger was “a really big hit.” Listed for $19, the eight-ounce patty combines brisket, chuck and short rib on a brioche bun with applewood bacon, caramelized onions, crispy brussels petals, white American cheese and aioli.

Graves said the hot honey cheese curds, sweet corn fritters and southern hot chicken sandwich also proved to be popular.

“The feedback has been excellent with the food,” she said.

Other menu options include:

“We like to say kind of elevated casual fare,” Graves said. “So just our own take on the traditional Midwest comfort foods.”

What drinks are available at Analytical Brewing?

For drinks, customers will find 15 beers from Analytical Brewing on tap. Graves said a cider, Pabst Blue Ribbon and Riggs Hefeweizen are also available.

There are two cocktails on draft, as well. Graves said the taps will feature a blood orange margarita and Analytical lemonade.

Customers can also find a variety of craft cocktails exclusive to Peoria. While the business has the approval needed to offer cocktails in Lexington, Graves said, “we don’t have a lot of room.”
