Why Villon Coffees' newest concept could become a beachside favorite

Villon, a Brevard business that started as a clothing company and expanded into coffee, is launching its biggest venture yet.

Villon Roasters is preparing to open a farm-to-table establishment in Satellite Beach this August, highlighting local ingredients and products made in-house.

Founded by local farmer and entrepreneur Mark Quavillon, Villon Roasters will combine a coffee shop, scratch bakery, gastropub and community gathering space under one roof.

Located at the former Goombay’s location at 306 State Road A1A, the storefront plans to open daily from 7 a.m. to 10 p.m. — with Sundays expected to close at 9 p.m..

Real farm to table experience

This new location will feature a full coffee shop with their legendary banana foster lattes and milk and honey cold brews, as well as a scratch bakery. All Villon coffee is roasted at Quavillon’s Fellsmere farm.

From muffins, loaves of bread, breakfast burritos and specialty waffles made with cold brew coffee to cookies nearly the size of pizzas, guests will be able to enjoy in-house or grab to-go.

More than a bakery and coffee shop — expect sandwiches, smash burgers, chicken wraps, veggie burgers and more. The restaurant’s meat will be sourced from a local butcher, from farms stretching from Okeechobee County through Brevard County.

Even the all-beef hot dogs will be produced in-house and Quavillon promises a throwback for locals.

“Lums hot dogs — the big thing was boiling the hot dogs in beer. So we’re gonna to do a nod to the past with that,” Quavillon said.

Customers will also find eight flavors of ice cream from local favorite Moo’s Ice Cream, as well as house-made sauces, pickles and hot sauces that can be purchased to take home.

The gastropub will emphasize Florida craft beverages, particularly local beers on draft, customizable seltzers and the increasingly popular dirty sodas.

“We will have 2 Villon beers, one’s made with our espresso, the other a Mexican lager. And they’re both made for us exclusively by BeachFly Brewing,” said Quavillon.

More than a restuarant

Meant to be a place for community gatherings, the venue plans on hosting live music, comedy nights and trivia events.

The business will continue selling the merchandise that helped launch the brand two decades ago, including board shorts, hats and shirts.

While the company’s downtown Melbourne location has closed, Villon is continuing to grow. The business plans to franchise, with locations in Sebastian and Cocoa Beach expected to open next month, too.
