THE DISH Le Bilboquet Market in Palm Beach now has Altima Caviar

A locally owned caviar brand known for its international sourcing has expanded its Palm Beach reach again: After growing its presence on restaurant menus in town, Altima Caviar now is featured at Le Bilboquet Market on Peruvian Avenue.

Altima Caviar — founded in 2022 by longtime Palm Beach resident and businesswoman Maribel Alvarez, who today is based in West Palm Beach and Spain — can be purchased at the specialty foods market in various sized tins.

Le Bilboquet Market debuted this past October on Peruvian Avenue with culinary director and esteemed chef Francois Payard. It’s a sister to Le Bilboquet French bistro on Worth Avenue.

“We’re thrilled to be working with a beloved local brand that is known for sourcing the highest quality caviar in the world,” said Erin Herz, manager of Le Bilboquet Market, 353 Peruvian Ave.

Offered at the market are three different globally-sourced caviars from Altima: Siberian (Georgia); Beluga hybrid (Bulgaria) and “platinum” Oscetra (Moldova).

The caviars are sold in 30-gram, 100-gram and 250-gram tins whose co-branded labels reflect both Altima and Le Bilboquet Market.

Prices start at $114 for a 30-ounce tin, Altima officials told the Palm Beach Daily News regarding its offerings at Le Bilboquet Market.

Altima recently debuted a limited-time caviar tin celebrating the 2026 FIFA World Cup, but that is not available at the market. Details about it are available at AltimaCaviar.com.

Le Bilboquet Market features a variety of gourmet items, coffees, teas, grab-and-go lunches — including salads, soups, sandwiches and daily specials — and other fare.

Altima Caviar also is featured on the island at Swifty’s at The Colony, 155 Hammon Ave.; Meat Market, 191 Bradley Place; La Goulue, 288 S. County Road; and Tutto Mare in Royal Poinciana Plaza, 340 Royal Poinciana Way.
