Many Pensacolians had their hopes crumble like, well, cookies, when Insomnia Cookies announced last year it was cancelling plans to open a Pensacola shop.
However, Pensacola residents can once again look forward to the national cookie chain making its local debut.
Insomnia Cookies, a warm cookies and sweets chain with locations across Canada, the U.S. and U.K., now plans to open a location in downtown Pensacola.
Permits from the city of Pensacola show Insomnia Cookies plans to open at 90 E. Garden St., next to Perfect Plain Brewing Co. and Union Public House.
In late September Insomnia Cookies announced it was opening new bakeries across the U.S., including states like California, New Jersey and New York, as well as international bakeries in Ontario, Canada and the United Kingdom.
What is so special about Insomnia Cookies?
Insomnia Cookies is a warm cookie company whose first brick and mortar shop opened in 2006 and is known for offering its sweet treats late into the night, with some locations delivering as late as 3 a.m.
The company has developed a cult-like following spanning over 300 locations since opening two decades ago.
Insomnia Cookies’ menu is filled with core favorites, such as Double Chocolate Mint and Salted Caramel, along with seasonal specials such as the Jinglebread made with a ginger and molasses dough with cinnamon and a rich cream cheese filling.
As the name indicates, cookies are the main sell at Insomnia Cookies, but its bakeries also offer other sweet treats such as ice cream, brownies, ice cream cookie sandwiches called “wiches” and cookie cakes.
The company caters to the various dietary needs of its fans nicknamed “insomniacs,” as well, offers varieties of cookies that are vegan and gluten-free.
Cookies are sold individually, ranging from about $3 to $4 each depending on flavor and size, or by the box, starting at about $14, according to Insomnia’s website set to the Mobile, Alabama store.
Insomnia canceled initial Pensacola bakery
In October 2024, Insomnia Cookies announced it was adding a location in Pensacola’s University Town Center on East Nine Mile Road, but had reversed course by December 2024.
“Unfortunately, Insomnia Cookies will no longer be opening in the Pensacola area,” Public Relations Account Executive Katie Rose Dwyre told the News Journal at the time. “We apologize for any inconvenience, and we hope to deliver warm, delicious cookies there soon.”
The reason for the change in plans was not disclosed.
Insomnia Cookies expanding rapidly
Insomnia Cookies hit store no. 350 under its global expansion plan and has opened 55 new bakeries this year. The company is aiming to open 1,800 bakeries around the world over the next decade.
Insomnia Cookies projects it will open more than 75 new locations in 2026, surpassing its previous record for annual openings.
Pensacola’s future Insomnia Cookies is one of two new locations opening in Florida under this rollout, with Boca Raton receiving the other bakery.
Most of the new Insomnia Cookies bakeries will open in the northeast U.S.
Insomnia Cookies has 15 locations across Florida at this time. Its bakeries can be seen in cities across the state, including Fort Meyers, Gainesville, Orlando, Tallahassee and Tampa, but Miami has the most of any Florida city with four locations.
Jacksonville is the runner-up, with three Insomnia Cookies locations at this time.
