Exclusive: Olympic runner plans dinner and nightlife concept in Boca

Downtown Boca Raton is poised to get a new kind of nightlife-driven dining destination this fall, one that aims to blur the line between restaurant and after-hours scene.

Fletchers, planned for 133 S.E. Mizner Blvd., is the latest concept attached to the area’s ongoing reinvention as a place not just for shopping and office tenants, but for evenings that stretch later than they once did.

The 120-seat restaurant in Royal Palm Place, spread across roughly 3,800 square feet, is being positioned as a hybrid that begins as a dinner destination and evolves as the night progresses into a more energetic lounge.

The restaurant is under construction and takes over the former Hijinks Sports Grill space.

A chef with an unconventional résumé

At the center of the project is chef Michael Stember, whose résumé is atypical for Boca Raton — or really anywhere when you think about it.

A former Olympic middle-distance runner for the United States, Stember competed in the Sydney Games after running at Stanford University where he still holds school records in the 800 and 1,500 meters.

He later built a following through a series of invite-only sushi pop-ups known as Sushi Belly Tower that traveled through New York, Los Angeles and other major cities. Those events, often staged as one-night experiences, leaned as much on spectacle as on the food itself.

Stember went on to open Ponyboy in Brooklyn’s Greenpoint neighborhood, a restaurant and nightlife spot that drew a steady late-night crowd, further shaping the hybrid approach he will bring to Boca Raton.

His cooking at Fletchers is expected to follow a similar thread, drawing from New American foundations with Japanese and Mediterranean influences.

The approach suggests a menu designed to appeal broadly while still reflecting his background in performance-driven nutrition and high-end, limited-access dining.

Designed to evolve as the night unfolds

His partners on the project are South Florida entrepreneurs Sam Meitus and Jake Marr, who describe the concept as filling an existing gap in Boca Raton, a place where dinner doesn’t necessarily signal the end of the night.

Fletchers is designed to evolve as the evening unfolds, shifting from a traditional dining room into a more energetic lounge with a built-in social scene.

“Boca Raton is on fire with companies and young professionals flocking here, and we are so inspired by this rapid growth,” said West Boca-resident Meitus in a media statement.

“A concept like Fletchers is long overdue for Boca Raton, combining elevated dining that transforms into a nightlife experience as the night evolves.”

Private clubs and a broader trend

A members-only component reflects a broader shift seen in cities like New York and London, where restaurant-affiliated clubs have become increasingly common.

At Fletchers, the 40-seat “Members Club” will offer an access-controlled space within the building, designed as a more private counterpoint to the main dining room with its own programming and events.

Fletchers would not be the first Boca restaurant to lean into a late-night identity. The brand new MiNo’s intimate omakase lounge and sibling spot Kapow Noodle Bar’s long-running, high-energy bar scene both carry well past dinner.

But Fletchers may be among the most deliberate in its design as a place built to shift over the course of an evening.

Whether that model resonates may depend on how much of Boca Raton’s audience is ready to linger.

For now, the project signals a continued push toward a more layered nightlife culture, one that developers and restaurateurs increasingly see as part of the city’s next phase.
