MICHELIN-recognized duo open scary good sandwich shop in SW Florida

Brandon Schewe and Caitlin Emery certainly know what they’re doing.

After all, they’re the forces behind not one, but two Bonita Springs restaurants recently named in the 2026 MICHELIN Guide Florida.

Their colorfully eclectic Asian-inspired Bohemian debuted in February 2022.

“It was kind of risky when we opened it,” Emery said. “A lot of people weren’t sure of what we were doing. It took a while to get going.”

Now it’s in the prestigious guide along with their Middle Eastern-flavored Canary Club, a wood-fired pizza and craft cocktail-focused gem.

“These are our hearts and our homes,” Emery said. “To be recognized this way is way more important than it may seem. (Canary Club) is not even a year old yet. This really surprised us with it being so new.”

So when we heard they opened Wichcraft, a gourmet sandwich shop conveniently located right next to The Bohemian in Entrada along Old 41 Road, we rushed right over.

And as you would expect from this dynamic duo, it’s oh-so-good.

“This has been my dream to own this,” said Emery, who also owns Downtown Coffee and Wine Company with Schewe. “Even before all the rest.”

Wichcraft crafts scary good sandwiches

Everything about Wichcraft is dreamy, especially the sandwiches.

They’re carefully crafted layer by layer, texture by texture, flavor by flavor.

Most everything, except for imported meats on the Italian, is made in-house.

“The roast beef, the turkey, all of it is brined, smoked, roasted in-house,” Emery said. “The kettle chips, the house dressing.”

Still in its soft-opening phase, the menu features about a dozen signature sandos to choose from. Options include a SWFL cheesesteak, grilled chicken club, roast beef & Swiss,  Grinder (with turkey pepperoni, salami and more on a toasty ciabatta), Your Favorite Italian, and Medianoche (midnight sweet bread filled with sliced ham, roasted pork, Dijonaise, house sweet pickles and hot honey).

Then there’s The Florence (toasted focaccia, prosciutto, chopped burrata, pistachio, pesto, lemon-dressed arugula and truffle honey) and Gobbler with pulled turkey, twangy mayo, cornbread stuffing, cranberry and orange relish on a challah hoagie.

“We created it after Capriotti’s (The Bobbie),” Emery said of the latter. “When it closed (in Bonita Springs) 15 years ago, it was the saddest day.”

Our mouths water just reading about the patty smash melt ― a fresh chuck, brisket & short rib patty with caramelized onions and special sauce on rye.

Our Imperial Banh Mi was spellbinding ― one of the best we’ve ever had ― with citrus ginger pulled pork, Gochujang aioli, pickled daikon carrots, cucumber, cilantro and jalapeno on a toasty baguette.

Everything about Wichcraft is relaxed

We plan on eventually eating our way through that glorious menu, which is displayed, ingredient-by-ingredient on crafty sandwich boards hung on the wall.

“We want to make sure you really look over the menu,” Emery said.

So much goes into each creation, feel free to take your time (there are a couple of gelato sandwiches, too).

Wichcraft has The Bohemian-esque feel in a small, fast-casual space ― lush, eclectic and bold in shades of bright green.

Vibrant paintings, plants and exotic statues fill the inside, along with the “world’s tiniest vintage thrift shop.”

“All the merch from the (other restaurants) is here,” Emery said. “And there are some select vintage items (consigned from Second Glantz). Even the art and mirrors are for sale.”

It’s a casually chic oasis, the perfect setting for these perfectly crafted sandwiches.

“Bonita needed this,” Emery said. “It’s such a cool lunch spot.”
