In December, Birch owners Kyle and Meghan Knall announced details about their highly anticipated French bistro, CASSIS, 333 N. Water St.
Along with background about the restaurant’s design, menu and inspiration, the Knalls shared that CASSIS would open on Jan. 5. Although construction crews were still working on the space, the Knalls were confident they’d be able to welcome customers in early January.
But construction delays soon made it clear that Jan. 5 was too ambitious a date to open. Guests who’d already made reservations were notified that the restaurant would be delayed and their reservations were canceled.
But now, a new opening date has been set. CASSIS will officially open its doors on Jan. 20.
When the restaurant opens, it will serve dinner daily, with daily apéro (happy hour), weekday lunches and weekend brunch coming at a later date. Expect laid-back, French country cooking in a casual bistro setting evoking a European subway station with vintage-inspired details.
“It’s food that we cook here and put in the middle of the table on a Sunday,” Kyle Knall told the Journal Sentinel in a December interview. “Very rustic French countryside. It’s about being very simple, delicious, straightforward and comfortable for everyone to enjoy.”
More information: Beginning Jan. 20, CASSIS will be open for dinner from 5 to 9 p.m. Sunday to Thursday and 5 to 10 p.m. Saturday and Sunday. Once apéro hours are introduced, they will be 2 to 5 p.m. daily. When lunch and brunch are introduced, hours will be 11 a.m. to 2 p.m. Monday to Friday for lunch and 10 a.m. to 2 p.m. Saturday and Sunday for brunch.
