The recent stretch of warm weather and sunshine is finally chasing away the winter blues.
For me, it also brings back fond memories of neighbors dropping by for a quick chat, a cup of coffee, and my stepmother’s much-loved coffee cake. So many childhood memories are tied to food, which inspired me to recreate this special recipe. I have always believed that most dishes can be made vegan, just as delicious and even healthier. Reworking old recipes with thoughtful ingredient substitutions has become both a challenge and a joy.
I am happy to say this vegan version captures all the flavor and comfort of the original. It is incredibly simple to make, comes together in just minutes, and is sure to delight your taste buds. Now this family tradition can continue, with a recipe that fits today’s lifestyle.

Note: I used half whole wheat flour. This results in a less fluffy cake but still flavorful.
