For me, the dish that stood out on my list of holiday must-haves was the rich, cheesy potato casserole. For years, it was a staple at every celebration — creamy, savory, and wonderfully comforting.
When I became vegan, saying goodbye to that classic casserole felt impossible. That sparked my determination to recreate the dish I loved so much — but in a healthier plant-based way. After some experimenting in the kitchen, I developed this lip-smacking vegan version that captures all the comforting flavors and creamy texture of the original. One of my favorite gauges of success, when converting a recipe, is to see the reactions of vegan skeptics. This casserole passes that test with flying colors. I’ve received many compliments, and nothing makes me happier than seeing guests go back for second helpings. The look of surprise when someone discovers that it’s entirely free of animal products is priceless.
Another reason I love this dish is its simplicity. It’s quick and easy to put together, making it perfect for any event — from a casual potluck to a big family dinner. For me, this vegan cheesy casserole is proof that we don’t have to give up the flavors we love to create new traditions. The vegan cheese and cornflake toppings are optional but enhance the flavor and win over vegan skeptics. The tapioca starch is important. This special ingredient gives the sauce its stretchy appearance. If your potatoes are raw (and not precooked like frozen hash browns are) you may need to add up to another 10 minutes.The cream of chicken soup base equals 2 cans of chicken soup, good for recipes calling for cream of chicken soup. This casserole can be assembled and refrigerated overnight. Bake when needed, adding extra time.
