Local food truck has new commissary kitchen away from Twin Towers Mall

PEORIA – Twisted Pasta began rolling out unique pasta products last year – a sandwich stuffed with spaghetti, a fettuccine-filled garlic bread cone and other Italian-inspired innovations.  

“We wanted to do something a little different,” owner Kyle Graves said. “We, you know, kind of stand out a little bit.”

Two trucks will be hitting the road this season, as the business begins operating out of a new commissary kitchen, located at 2244 W. Glen Ave., Peoria.

Graves said an employee noticed the storefront – once home to Jeff Scott’s Tamales – while driving by. The space offered an ideal amount of room at a reasonable price.

Twisted Pasta, formerly located at Twin Towers Mall, considered other options, but Graves said they proved to be too costly for the business’ current needs.

“We’re just going to use it as a commissary for our two food trucks this year,” he said. “So, we didn’t need like a full-scale restaurant right now.”

Ultimately, he said the West Glen location was “a perfect spot.”

No dine in will be available to start, but Graves said this could change during colder months. He did not expect to serve people out of the Twin Towers Mall last winter but wanted to try to remain operational for his employees.

“Our main focus is really just the food trucks right now,” he said.

Twisted Pasta will soon add a second truck to its fleet. One will remain in the Peoria area, Graves said, while the other will travel and attend festivals and events.
