High-end seafood-steakhouse restaurant opens in Palm Beach Gardens

Palm Beach Gardens is about to get a new excuse to dress up. Eddie V’s Prime Seafood, the polished, high-energy steak-and-seafood restaurant equally known for its theatrical cocktails and live music lounge opens April 26 at Legacy Place.

It marks the brand’s first Palm Beach Gardens location and its second in Palm Beach County, joining the longtime Boca Raton outpost.

If you’ve been to Eddie V’s before, the formula will feel familiar. The dining room leans sleek and clubby, while the adjoining V Lounge sets the mood with dim lighting, a nightly rotation of live music and a menu designed to stretch the evening well past dinner.

When I visited the Boca Raton restaurant, the scene felt a bit Vegas-y a la Venetian without the chaos. It’s luxe, lively and unapologetically indulgent.

Menu showstoppers

The menu centers on seafood flown in from around the world alongside hand-carved prime steaks prepared by an in-house butcher. Signature dishes include Chilean sea bass steamed Hong Kong-style, Parmesan-crusted sole and the crowd-pleasing crab fried rice.

Steaks are cut daily and broiled to order, reinforcing Eddie V’s positioning as a hybrid steakhouse and seafood destination rather than an either-or proposition.

Dessert is very much part of the show. Bananas Foster butter cake arrives flambéed tableside, finished with butter pecan ice cream and enough spectacle to pause nearby conversations. All desserts are baked daily in the restaurant’s pastry kitchen, a detail the brand likes to emphasize and one that regulars tend to appreciate.

Cocktails are another headliner. In the V Lounge, the “Cocktails With Attitude” menu leans into presentation without losing its footing. The Smoked Old Fashioned is torched tableside, with smoke trapped in the glass before pouring. The Hope Diamond cocktail shifts color from deep blue to vivid magenta, a visual trick that reliably draws phones out of handbags.

Wine lovers will notice the walk-through glass wine tower, stocked with more than 300 bottles, including Champagne and a deep bench of steakhouse-friendly reds. The list at other Eddie V’s locations has earned recognition from Wine Spectator and is designed to serve celebratory dinners as comfortably as expense-account martinis at the bar.

A name to know

The Palm Beach Gardens restaurant is led by Managing Partner Heather Houston, who brings 25 years of industry experience and a local résumé that includes Darden siblings Seasons 52 and most recently The Capital Grille in Palm Beach Gardens.

Houston is excited to introduce Eddie V’s to a community she knows well and to create what she calls a glamorous night-out destination anchored by fresh seafood, cocktails and live music.

Beyond the dining room, the opening carries an economic footprint. The restaurant is expected to create roughly 75 new jobs spanning front- and back-of-house roles.
