A new Coney Island restaurant has opened for anyone passing through Emmett via I-69.
Sophie’s Coney Island opened for business on May 14 at 2989 Kinney Road. The restaurant is set near the I-69 Amoco Truck Stop, providing traditional breakfast, lunch and dinner options for travelers and local residents alike.
In addition to the mandatory Coney Island hot dogs, Sophie’s offers bacon, eggs, sausage and pancakes on its breakfast menu, hot and cold sandwiches and burgers with coleslaw and fries for lunch and dinner.
The new restaurant was opened by Joseph and Diana Ljajcaj. Diana had worked in various restaurants for years. When her husband, who has worked as a truck driver for 20 years, wanted a change of career that allowed him to be at home with his family more, the two came up with the idea of opening their own restaurant, the kind of place Joseph would visit while on the road.
Sophie’s Coney Island features several seating options, including booths, tables and a bar area near the kitchen.
The couple named their Coney Island business after their 12-year-old daughter, whom Diana said regularly helped the family prepare food at home.
“Since she was little she has always seasoned our food” Diana Ljajcaj said.
The couple’s daughter is also the namesake for one the restaurant’s signature menu items: Sophie’s Special, a breakfast item that includes a full breakfast of ham, eggs, bacon, pancakes, toast and jelly with three eggs cooked to the customer’s choice for $12.95. Although it’s a breakfast item, the family said customers can order it any time they please.
Sophie’s Coney Island is open from 7 a.m. to 3 p.m. from Saturday through Wednesday and from 7 a.m. to 8 p.m. on Thursdays and Fridays.
