Peoria eatery expands lunch selection with second concept

PEORIA – BrightSide Kitchen is expanding upon its consistent lunchtime offerings.

A June Facebook post about the changes noted: “We’ve spent the last few months listening, learning, and figuring out how to make this place better for our guests and better for our team.”

Customers will now find a selection of items from chef Josh Lanning’s BrightBird Chicken Sandwich concept during lunch. This includes new, health-focused entrees like the skinny chicken wrap, BB Caesar and East Bluff Gem salad.

“I’m really excited to put a couple of really solid salads out there that will hopefully stand the test time and become some crowd favorites,” Lanning said. “So, it’s just an overall balance. You know, at the end of the day, creating a concept and a business that people want to come to regularly instead of seeing it as a treat.”

Other lunch options include:

Lunch is offered from 10 a.m. to 1 p.m. Thursday through Sunday. The business opens for breakfast at 7 a.m. Thursday and Friday and 8 a.m. Saturday and Sunday.

Along with introducing additional lunch options, Lanning said customers can purchase $1 bagels during a “last call” from 1 p.m. to 1:30 p.m.

Situated at 106 E. McClure Ave. in Peoria, BrightSide Kitchen houses three separate concepts created by Lanning: BrightBird Chicken Sandwich Shop, BrightBelly Ramen and Bright-O-Bagels.

Late next month, Lanning expects to expand the storefront’s offerings once more to offer BrightBelly Ramen for dinner two or three times per week.
