Michigan beach town recruits Detroit-area sandwich talents

Carlos Parisi and Mike Finsilver, two metro Detroiters passionate about the art and craft of a great sandwich, are teaming up to open a sandwich counter in Michigan’s Thumb area.

Parisi, the organizer of annual events dedicated to sandwiches, including Sandwich Week and Detroit Sandwich Party, and Finsilver, owner of the Ferndale sandwich shop Tall Trees Café, have their sights set on bringing the counter to Foley’s Market in downtown Lexington, Mich.

Foley’s Market has remained standing at its Huron Avenue post since 1858. Though it has changed hands and operations over the years — for decades, Foley’s functioned as a party store — new ownership in the Roxbury Group has restored the building to its former glory, giving new life to an original deli display cooler, and adding a bar and cigar lounge.

“When the Roxbury Group gave Mike and me the opportunity to partner up for something so special with a small and proud community like Lexington, it just felt so genuine to the way we like to work,” Parisi said.

The duo has curated a sandwich menu featuring ingredients made by local purveyors, ideal for days on the beach in Lexington, which sits on the shore of Lake Huron. In addition to the handhelds, Foley’s will serve fresh salads, dips and specialty grocery items.

While Parisi and Finsilver manage the sandwich counter, another familiar Detroit-based entity will have a presence at Foley’s Market, which will continue to sell beer, wine and spirits. The Eastern Market Detroit City Distillery is on board to manage a new bar at the market.

Parisi said he and Finsilver are planning for a soft opening Memorial Day Weekend. The official grand opening is anticipated for Fourth of July Weekend.

“We’re excited to feature some delicious options that will continue to make Lexington worth every visit.”
