A new restaurant is getting rolling in Burkburnett.
Rolling is the operative word for the moment.
Jake and Hillary Russey are opening Gringo’s Texas BBQ in the former location of Chief’s Corner Café at 900 Sheppard Road.
While the final work and permitting on the building is underway, the Russeys are doing business out of their food truck.
“We started Aug. 22 last year in a tent doing festivals and things like that. We’ve gone from a tent to a trailer and now to a brick-and-mortar restaurant,” Jake Russey said.
He said he began his barbecuing business in Central Texas.
“If you know anything about barbecue, then Central Texas is the king,” he said.
The couple specializes in brisket, pulled pork, baby back ribs and chicken wings. Jake makes his own sausage in house.
He said everything is made from scratch.
Sides include cornbread, creamed corn, pinto beans, potato salad, cole slaw and a green chili macaroni and cheese. Desserts include apple cinnamon cobbler, banana pudding and Texas sheet cake.
Jake said the couple makes their own spices and rubs that give their meat a Tex-Mex flair.
He said once they open for business in the building, hours will be 11 a.m. until sold out Tuesday through Saturday and shorter hours on Sundays. They’re shooting for mid- to late August as an opening date for the store.
