A Wichita Falls restauranteur has turned his efforst toward a Texas favorite, barbeque.
Kyle Dalka has opened Dalka’s Craft BBQ food truck in the 3900 block of Kell East Boulevard near Red Barn Butchers.
Dalka said everything is made in-house.
“We cut our own brisket, smoke our own brisket. We make our own sausage and sauce. We smoke everything,” he said.
He said the truck serves cafeteria style.
“So you can come in and order plates or you can order by the quarter, half or whole pound,” Dalka said.
He said for now, the truck is open 11 a.m. to 2 p.m. Wednesday through Saturday, and business has been good.
“Pretty much by 2 p.m., we’re selling out every day,” he said.
Dalka said a new smoker should be delivered in about three weeks, which will enable him to extend his hours.
Dalka formerly operated Progress Pizza in the Wichita Brewing Company at 701 Indiana Avenue but sold that to the brewery, he said.
“So pretty much I am just doing the barbeque food truck and private chef work and catering,” he said.
