An acclaimed central Ohio chef is closing two of his Delaware restaurants.
Rosebud’s and 1808 American Bistro in Delaware will both close Oct. 11, owner and chef Josh Dalton wrote in social media posts Oct. 2.
“It’s been an honor to be part of your celebrations—birthdays, anniversaries, quiet dinners, big nights out,” Dalton wrote on 1808 American Bistro’s social media pages. “Watching families, couples, neighbors, longtime friends, and new faces cross our threshold has been the joy of this undertaking.”
Dalton, a native of New Orleans, opened 1808 in 2007. It was his first central Ohio restaurant.
Over the years, the Rosebud’s space has been home to several previous concepts, two of which —Veritas Tavern and Speck Italian Eatery — have since moved to downtown Columbus.
No matter which restaurant called the 15 E. Winter St. location home, Dalton wrote that certain characteristics remained — creating a place where people could gather, share a meal and feel taken care of.
“This space has been so much more than just a restaurant to me — it’s been a home for ideas, a place to take risks, and an incubator for dreams,” he wrote on Rosebud’s social channels.
Dalton thanked patrons for supporting both eateries, thanking them trusting staff with their evenings and special moments as well as for being patient when kitchens were busy or changes were made.
“Closing this door is bittersweet, but I carry nothing but gratitude,” he wrote on Rosebud’s page. “Delaware has given me a community that believed in me, challenged me, and made all of this possible. For that, I’ll always be thankful.”
The closures come on the heels of Dalton taking over the former home Milestone 229 along Scioto riverfront. His yet-unnamed restaurant is set to open in the spring of 2026 with a Mediterranean menu that will include influences from southern Europe, northern Africa and the Middle East. He also plans to open a Mexican restaurant called Rosalita’s on Gay Street in Columbus in the summer of 2026.
