4 new Lower Hudson Valley food trucks run gamut from pizza to buns

It’s officially food truck season, and the Lower Hudson Valley’s mobile dining scene just gotten tastier with the addition of three new trucks. Hitting the road for the first time this year — and available for private parties — they run the gamut from pizza to smoothies to Korean beef barbecue “grub buns.”

Mostly Dough

This is the first season for the Mostly Dough food truck which serves up a variety of neo-Neapolitan pizzas. Chef/owner Erick Carrasco launched his business in 2023 after spending several months refining his dough formulas and perfecting his process. As demand grew, he realized it was time to take the business to the next level. So, when he came across a horse trailer, for sale, he thought it would be a “cool, unique concept for a pizza truck.”

He then gutted it and rebuilt it from scratch.

“We framed the walls, installed new sub floors and insulation, upgraded the electrical system and installed all new equipment,” he said. “With the addition of our standing, reach-in fridge, we can carry up to 325 dough balls, making it easy to do multiple events in one day.”

The new trailer, which debuted May 9 at the TaSH Farmer’s Market in Tarrytown (his usual spot), helps streamline the process without compromising on quality. Carrasco is particularly proud of his dough and the Molino Pasini flour which is imported from northern Italy. He also uses organic tomatoes from California and collaborates with vendors and farms to source ingredients for toppings. Brooklyn Organic Kitchen

Sandra Marinelli, chef/owner of Mahopac-based Brooklyn Organic Kitchen, has been wanting to do a food truck for a long time, dating back to when she was dealing with a sick family member and couldn’t find healthy food anywhere near the hospital that didn’t involve a long drive. Now her 14-foot trailer, which offers a smaller version menu of some of her organic restaurant’s greatest hits (i.e. sandwiches, salad and smoothies, all of which can be made traditional, vegan or with gluten-free options), alternates between parking outside the Memorial Sloan Kettering campuses in Harrison and Montvale, N.J.

The all-electric vehicle, which has been in operation since early May, can also be found on alternating weeks at the White Plains Farmer’s Market as well as Food Truck Friday’s in Pound Ridge and most Saturdays at Harvest Moon Farm & Orchard in North Salem.

Specific to the truck is a chicken parm panini, New York pastrami Reuben, Cubano sandwich, Brooklyn burger, Greek salad, fresh smoothies and green juice. Everything can be customized for private events. To book, email brooklynorganickitchen@gmail.com. More details at bokmahopac.com.

Grub on the Go

In the 10 years she’s owned Grub, an Asian fusion spot in West Nyack, chef/owner Waree Sunlee, has gotten numerous requests for a food truck. So, on June 6, she’s premiering Grub on the Go, a portable version highlighting her famous Grub buns, filled with a variety of proteins (think Korean beef barbecue, panko-fried shrimp, chicken satay and portobello bulgogi).

Her launch event, from 3 to 5 p.m. in front of her restaurant (719 W Nyack Road), will feature a variety of contests, games and giveaways with proceeds benefitting breast cancer research. (Come hungry for a bun eating competition and a squat contest where if you do 20 squats you get free buns.)

Buns, however, are only part of what’s available should you hire the truck for private events as Sunlee can customize menus to feature dumplings, tacos, empanadas, etc.

This business expansion comes on the heels of a new addition to her dining room, which gave her 34 more seats plus room for private dining. Grub now has a total capacity of 64.

Bobo’s

Craig and Glen Bernardi, owners of the widely popular Bobo’s Cafes, are not only expanding their empire with two new locations coming later this summer/early fall to Yorktown Heights and Tarrytown — they’ve also added a food truck.

The new truck, aptly named Bobo’s Cafe, will debut June 25 at the Impact Charity Golf Outing in the Bronx.

The concept, said the brothers, was born out of a growing demand from customers, organizations and businesses looking for a more interactive catering experience. While Bobo’s has long offered catering through its cafes (they have cafes in Somers, Baldwin Place, Chappaqua and Ridgefield, CT), requests for on-site services at private parties, corporate events, weddings, school functions and community gatherings, has continued to grow.The new food truck, which they are booking now and hope to be at a community event near you, will feature many of the cafe’s popular favorites such as egg sandwiches, açaí bowls, and coffee along with some unique offerings like affogatos and custom desserts.
