Vegan potato zucchini egg bake | Vegan Column

People embrace a vegan lifestyle for a variety of reasons − concerns about personal health, compassion for animals, or a desire to lessen their environmental impact. For our family, it was all these reasons that led us to make the switch. And after 14 years of living plant based, I can confidently say that the journey was both rewarding and delicious.

One of the common fears when transitioning to a vegan lifestyle is the idea of giving up beloved comfort foods − those dishes tied to warm memories of family gatherings or holiday brunches. But the truth is, you do not have to let go of those cherished meals. With a little creativity, it is possible to transform old favorites into healthier, cruelty-free versions that are just as satisfying.

This vegan potato zucchini egg bake is one such dish. Inspired by the classic egg casseroles I used to love, this version skips cholesterol laden ingredients without sacrificing flavor or heartiness. It is simple to make, packed with veggies, and perfect for breakfast, brunch, or even a light dinner. Best of all, you can prepare it the night before − just refrigerate and bake it fresh in the morning.

As it bakes, your kitchen will fill with mouthwatering aromas that will have everyone gathering around the table. Vegan Potato Zucchini Egg Bake

Note: You can alter the ingredients to your preferences. I sometimes use soy chorizo, or crumble beyond brats into the casserole. If you bake this after refrigerating overnight, you will need to add approximately 10 minutes of time to your baking.
