Instead of closing for the summer as its dining-establishment predecessors have done in the past at the Palm Beach Towers condominium complex, Bice Group’s Salute restaurant is set to remain open all summer — with enticing new menu options.
Though Salute’s lunch and weekend brunch are temporarily off the table during the slower season, the Italian-leaning Mediterranean restaurant, continues to serve dinner nightly, opening its doors at 3:30 p.m. for happy hour.

The restaurant debuted this past winter at Palm Beach Towers, 44 Cocoanut Row. Along with its regular dinner menu, it now is featuring a multi-course tasting menu — five courses for $68 — by executive chef Robert Deiaco and his culinary team.
As “the purest expression of a chef’s voice,” the tasting menu “allows us to take our guests on a journey, one course at a time,” Salute managing partner and Bice Group CEO Raffaele Ruggeri told the Daily News.
The multi-course menu also suits the unhurried and less-crowded summer season: Guests can linger and enjoy the five courses.
The menu changes weekly and there are choices for each course.
Look for such dishes as bluefin tuna carpaccio with asparagus, olives, Tropea onion confit, tomato confit and poached quail egg; crispy zucchini flowers with stracciatella and white anchovy filling, tomato ragu and basil oil; risotto Aquarello with arugula pesto, stracciatella, lemon and shrimp tartare; Wagyu filet with sauteed baby spinach, grilled oyster mushrooms and Bearnaise sauce; and Salute tiramisu.
Other recently featured dishes on Salute’s tasting menu: Angus beef carpaccio with vegetable crudités, aged Parmesan, walnuts, Valerian greens and Laudemio extra-virgin olive oil; veal meatballs in white wine, oregano, tomato-flavored jus and potato fondant; gnocchetti filled with snow crab, potato, sheep’s milk ricotta, jus and herbs; pan-seared Dover sole with roasted baby artichokes, Cerignola olives and more; and panna cotta ai Lamponi with raspberry crisp, raspberry compote and raspberry sorbet.
