Chapelure ownership announces plans for new bakery in Okemos

MERIDIAN TWP. – Just a month after a cafe and bakery in the Hannah Plaza closed, its ownership has announced plans to open a new bakery in Okemos.

“We are back – well, almost!” Chapelure officials wrote in a Jan. 25 post on the company’s Facebook page. “We are excited to share that we’ve secured a new unit in Okemos, located in the former Biggby’s on the corner of Mt. Hope & Hagadorn Rd. Construction is officially underway, and we can’t wait to open our doors again.”

The new bakery, The Flaky Croissant, will occupy a storefront at 4480 S. Hagadorn Road, a first-floor space just below the Hamptons Apartments.

The 1,750-square-foot space will offer seating for 26 people, said Soogee Ahn, who co-owns the business with her husband, Tae. The menu will be scaled back from Chapelure’s offerings, focusing on pastries, croissants, and Danishes. The bakery will also offer specialty coffee drinks, including lattes and cappuccinos, she said.

Chapelure closed its doors at 4750 S. Hagadorn Road on Dec. 20 after more than 17 years in business. The business, known for its French pastries, first opened in 2008 in a storefront in The Heights at Eastwood near the Eastwood Towne Center in Lansing Township. The cafe later relocated to East Lansing’s Hannah Plaza.

The couple closed Chapelure at the end of its lease at Hannah Plaza, Ahn said. At the time, they hadn’t planned on opening a bakery again, she said.

“We didn’t have thoughts of continuing,” Ahn said. “We were just so tired and we couldn’t see a good outlook for it, but there was an outpouring of support from, I think, Facebook and just the comments of our customers that really wanted it.”

The Flaky Croissant is expected to open in mid to late February, she said. The space needs only minor updates first, Ahn said.

The Flaky Croissant will employ eight to 10 employees, she said.

“Thank you so much for all the heartfelt comments and support you shared with us,” read the post. “Your encouragement truly kept us motivated to continue serving our beloved customers. We appreciate you more than we can say and can’t wait to welcome you to our new location.”
