If you’ve ever ended a meal at Jolie American Bistro, you may have saved room for its tiramisu— the classic Italian dessert made of delicate layers that balance richness and lightness.
FLORIDA TODAY sat down with sous chef Luca Malka to see how the dessert is made, step by step.
If you don’t want to try make this at home, call ahead to be sure it’s on the nightly menu. And if you miss it, don’t worry: The restaurant has earned a following for its cheesecakes, too.
Classic Tiramisu with Zabaglione Cream

1. Make the Zabaglione (Italian Custard)If using gelatin: Add gelatin to the Marsala wine and let it soften.Set up a double boiler over medium heat, until the temperature reaches 160–170°F In the double boiler, combine Marsala, egg yolks, sugar, salt and scraped vanilla bean.
Whisk continuously for 15-20 minutes, keeping the mixture moving and scraping down the sides. Continue until the mixture becomes thick and creamy. Remove from heat.Pat in (or fold in) the mascarpone cheese until smooth.2. Make the Whipped CreamIn a bowl, beat the heavy cream on low speed until it begins to thicken.Slowly add the powdered sugar while mixing. Continue beating until medium to high peaks form. Mix in the ground coffee. Fold into the zabaglione base.3. Make the MeringueIn a clean bowl, beat egg whites with a hand mixer. Gradually add the sugar.Beat until medium peaks form. Fold into the zabaglione base. Your tiramisu cream is complete.4. Prepare the Coffee SoakCombine the cold brew coffee, Kahlúa, Marsala and sugar until sugar is dissolved.5. Assemble the TiramisuQuickly dip each ladyfinger into the coffee mixture (soft, not soggy). Layer soaked ladyfingers in a dish. Spread a layer of cream over them. Sprinkle with finely chopped chocolate. Dust lightly with cocoa powder. Repeat layers until all ingredients are used. Finish with a final dusting of cocoa powder.
