Fast-food chicken restaurant saw five priority violations in Hartland

Each month, the Livingston County Health Department inspects restaurants, schools and other facilities for unsafe food practices.

Good food safety practices are critical to preventing foodborne illness and promoting public health. The Daily publishes reports on “priority” violations — those that could “directly lead to contamination of food or increase the risk of transmitting a foodborne illness,” as well as corrective measures taken. At least 20 establishments inspected in November had priority violations. Follow-up inspections of those violations are provided if they occurred last month.

Five priority violations were found at:

Big Chicken: 10490 Highland Road in Hartland

Spindles and other food contact surfaces at the shake machine were only sanitized at the end of the day, instead of every four hours.

The dishwashing machine only reached 120 degrees. To properly sanitize, the water should reach at least 160 degrees.

Cooked onion rings were being stored at room temperature. The onion rings were discarded, and will now be held in the warmer at 135 degrees.

The wrong valve was attached to the mop sink, which could’ve caused the backflow prevention device to fail.

No soap was available at the front counter handwashing sinks because the batteries in the dispensers were dead. The batteries were changed.

Two priority foundations were found at:

Hatorando Sushi: 10582 Highland Road in Hartland

Several in-house prepared sauces were past their use-by date. All affected items were discarded during the inspection. The inspector found sushi rice without a time control mark. The proper label was attached during the inspection.

KFC: 3780 E. Grand River Ave. in Howell

Two large pieces of fried chicken were cooked to internal temperatures below 165 degrees. The food was discarded. A food probe thermometer wasn’t readily available at the fryer station. The thermometers were located at the opposite end of the kitchen.

Side Car Slider Bar: 120 W. Main St. in Brighton

The bar cooler was holding half-and-half at 50 degrees. It was discarded during the inspection. This violation was cited for the second time.

The dishwashing machine wasn’t sanitizing. Staff members will use the three-compartment sink until it’s repaired.

Yume Sushi and Asian Cuisine: 8028 W. Grand River Ave. in Brighton

One of the sushi display coolers was holding food at 44 degrees. The temperature was lowered and the fish moved to another cooler. The display cooler was holding at 41 degrees by the end of the inspection.

Imitation crab was left out at room temperature during lunch, holding at 59 degrees. The crab contains fish meat and must be held at 41 degrees or less. It was discarded.

Miso soup was holding at 130 degrees. It was heated to over 200 degrees less than two hours earlier. It was reheated, and the owner will determine whether the unit can hold at 135 degrees. If not, it must be replaced.

Time instead of temperature control was used for sushi rice. The facility has written procedures, but they weren’t available. The rice had just been made, but wasn’t marked with the time it was removed from temperature control.

Coratti’s Pizzeria: 316 E. Grand River Ave. in Howell

House-made mashed potatoes were held beyond the seven-day discard date. The potatoes were discarded.

El Patron To-Go: 12520 Ten Mile Road in South Lyon

Raw chicken was stored over raw beef and raw beef was stored over a ready-to-eat food dish. The foods were rearranged.

Hell Saloon: 4093 Patterson Lake Road in Pinckney

There were no paper towels in the dispenser at the kitchen handwashing sink. It was refilled during the inspection.

Jersey Mike’s Subs: 9984 E. Grand River Ave. in Brighton

Two refillable chemical spray bottles weren’t labeled. The bottles were labeled during the inspection.

Lakelands Golf Country Club: 8760 Chilson Road in Brighton

The condiment cooler was holding food at 42-46 degrees and the ambient air temperature was 47 degrees. The unit was holding at proper temperature 2-3 hours prior. The person-in-charge adjusted the unit and the ambient temperature dropped four degrees in 30 minutes. The person-in-charge said they would continue to monitor the temperature.

During a follow-up inspection, the cooler was still inconsistently maintaining proper temperature, so it was removed from service.

Little Caesars: 9998 E. Grand River Ave. in Brighton

Two cans of mushrooms were badly dented along the bottom seams. The items were removed.

Casa Tequila Brighton: 501 W. Main St. in Brighton

The cooler under the small grill was holding food at 45-50 degrees. The raw meat was previously holding at 41 degrees for 2.5 hours, so it was moved to another cooler. The other foods weren’t time/temperature controlled. This violation was cited for the third time. 

Lu and Carl’s Bar & Grille: 100 W. Main St. in Brighton

There was a sprayer attached to the hose on the mop sink. It was removed and will only be attached when in use, unless a wasting tee/sidekick valve is installed.

M Street Baking Company: 117 N. Michigan Ave. in Howell

The dishwashing machine wasn’t sanitizing. Employees will sanitize in the three-compartment sink until the unit is repaired.

Mugg and Bopps: 763 S. Michigan Ave. in Howell

The paper towel dispenser at the handwashing sink in Dunkin’ wasn’t working. The unit was fixed during the inspection. This is the second time this violation has been cited.

North Ridge Church: 7555 Brighton Road in Brighton

The dishwashing machine wasn’t sanitizing. This is the second time this violation has been cited. Staff members will sanitize dishes in the three-compartment sink until the unit is repaired.

During a follow-up inspection, the person-in-charge decided to remove the dishwashing machine altogether and continue using the three-compartment sink for sanitizing.

Thread Creek Coffee: 10051 E. Highland Road in Howell

Cold brew coffee was labeled for fourteen days instead of seven. The date marking was updated. This is a repeat violation.

Tim Hortons: 3980 Grand Oaks in Howell

An employee was seen using a beverage cup to scoop ice. This results in bare-hand contact with the ice. Proper procedure was discussed and the violation was corrected.

White Castle: 3832 E. Grand River Ave. in Howell

Cheese and cut tomato were holding at 50 degrees. The soft-serve machine was holding mix at 50 degrees. Such foods must be held at 41 degrees or below. The items were discarded. This violation was cited for the third time during the last five inspections.

Wings Etc: 1788 N. Old US-23 in Howell

Several containers of cleaning products were found without proper labels. During the inspection, staff either disposed of the products or properly labeled them.
