The name is a nod to Gervasi matriarch Linda Swaldo and derived from “Oh, Beautiful” in Portuguese. Gervasi revealed the name on Sept. 11. It had announced plans for the restaurant in late July.

“OLINDA is about creating a vibrant social destination,” Gervasi CEO and general manager Scott Swaldo said in a prepared statement. “We wanted to design a place where people can gather for everything from brunch to a fun night out with friends or a casual dinner after work, an experience that feels special but welcoming.”

The Canton-based vineyard and resort — which is celebrating its 15th anniversary this year — said OLINDA will bring “a fresh, stylish dining experience to the community, featuring a modern menu of shareable plates, chef-inspired entrées, and artfully crafted cocktails.” Gervasi also said it will have “a sleek interior, innovative bar, and a menu that celebrates bold flavors and creative combinations.”

OLINDA will be located in the former BAM! and Royal Docks taproom space at 7160 Fulton Drive NW. The restaurant is set to open in 2026.

Gervasi is a major tourist destination in Stark County that offers restaurants, a winery, distillery and overnight accommodations on its 55-acre estate in Canton. It also owns the Twisted Olive restaurant in Green.
