Sure, DeWolf Brewing Co. began serving a variety of craft beer right around Christmastime. And visitors began digging into the Spanish tapas-inspired menu items shortly after the new year.
But any excuse for a party, right?
So, on May 28, the Victor brewing operation that had been years in the making celebrated a ribbon-cutting ceremony.
Now it’s official.
Even after six months, owner Justin DeWolf said it’s surreal after working so hard and for so long on a concept, even though he and his wife, Mari, and staff haven’t stopped working to improve. But it’s exciting all the same.
“It’s really great to see the reaction from the community,” said DeWolf, who grew up in Phelps and went to Midlakes High School. “To hear the feedback makes it all worth it in the end.”
DeWolf had been thinking about doing this for years. Planning, as well as renovating the former feed store location, which dates to the 1800s in the village of Victor, took another four years.
Kathy Rayburn, who is executive director of the Victor Local Development Corp., said she and DeWolf have been in communication for some time about the project.
“We’re so excited,” Rayburn said. “We’re happy that you chose Victor.”
DeWolf’s patatas bravas, croquettes and other shareables, washed down with a variety of beer styles, pay homage to the five years he lived in Barcelona, Spain, which is where craft brewing took hold for him and also where he met his wife.
World experience pairs well with the bounty the Finger Lakes region close to home has to offer.
Ontario County is known for its tourism and agriculture, said Tracey Dello Stritto, president and CEO of the Ontario County Chamber of Commerce. DeWolf Brewing Co. fits right in.
“This embodies all of that,” Dello Stritto said.

DeWolf Brewing Co. is at 60 Maple Ave., Victor. Ribbon-cutting weekend continues through May 31. The first 50 guests each day receive a free branded pint glass. DeWolf will be offering tours of its 10-barrel brewing system May 30 as part of ribbon-cutting weekend.
