These British expats in Mount Kisco share their Pimm's Cup recipe

After USA TODAY named The Ambleside Pub in Mount Kisco, one of its 38 USA TODAY Bars of the Year for 2026, we knew we’d want to celebrate with a cocktail.

So we asked for a recipe. We got The Pimm’s Cup — about as British a drink as you can get.

First created in 1823 by London oyster bar owner James Pimm, who originally served it as a digestive to accompany oysters, this refreshing mix of gin, botanicals, and lemonade has become practically synonymous with Wimbledon where it’s often seen with colorful garnishes in chilled plastic cups.

Light, citrusy, and slightly herbal, its combination of simple ingredients creates a crisp, refreshing drink that, similar to an aperol spritz, tastes like summer in a glass.

So how do you make a perfect Pimm’s? We went to British-born Jimmy Nutt, general manager at The Ambleside Pub in Mount Kisco, for the recipe.

Pimm’s Cup 

2½ ounces of Pimm’s No. 1 (a classic British gin-based liqueur)

½ ounce of Rose’s lime juice

5 ounces British lemonade (The Ambleside’s general manager Jimmy Nutt uses R Whites)

Mint and sliced cucumber (for garnish)

Add ingredients, one at a time, in a glass with ice (either a large wine glass or highball). Lightly stir and garnish with cucumber wheels and a mint sprig.
