Meatloaf is a classic comfort food and a staple of home cooking, yet it is not an obvious candidate for “veganization.” After all, the word “meat” is right in the name. While it is possible to substitute plant-based meats into a traditional recipe, the results can be expensive and sometimes disappointing.
This recipe takes a different approach, using simple, affordable pantry ingredients to create hearty individual loaves that are packed with flavor and satisfying texture. I brought these to a potluck thinking I had made far more than anyone would eat, but every loaf disappeared, and I went home with several requests for the recipe.
So, if you’re looking for a little real Americana comfort food that can be enjoyed by vegans and non-vegans alike, give these individual meatloaves a try.

These loaves are perfect for meal preparation. After shaping the loaves, store them covered in the refrigerator for up to one week. When you’re ready to eat, simply place them on a baking sheet and bake as directed.
