Pensacola’s Fuji Sushi & Grill is permanently closing its doors at 6235 N. Davis Highway Suite 116 beginning Aug. 18 after just over a year serving the Pensacola area.
“We are incredibly grateful to everyone who has supported us, dined with us, celebrated with us, and made Fuji part of your meals and memories. Serving the Pensacola community has meant so much to our team, and we truly appreciate every guest who walked through our doors,” Fuji shared in a social media statement on Aug. 17. “Thank you for your kindness, your support, and for being part of our Fuji family. We will always be grateful for the time we were able to serve you.”
The restaurant was known to offer Korean Barbecue, hot pot and sushi, replacing Lee’s BBQ & Hot Pot.
Fuji opened in April 2025 under owners Chuck Hsu and Anna Hsu, who also own and operate Momotaro Ramen, alongside friends and chefs Tony Wang and Cindy Wang. Together, they set out to bring back the nostalgia of the original Fuji restaurant Tony opened in the early 2000s at the exact location.
“We were thinking, ‘We’re supposed to bring the Fuji back.’ That’s why we partnered together to reopen it this way,” Chuck told the News Journal in a previous interview. “Fuji is really successful in Pensacola, and by talking with a lot of old people and old customers, everybody is missing the Fuji…. if we can bring the Fuji back, we can make a lot of old customers happy. We can get together like old times.”
Hsu set out to share a piece of the past with the new generation, bringing back special rolls like the massive, colorful Special King Roll stuffed with fresh seafood and the tempura-cooked shrimp, avocado-topped Ninja Turtle Roll.
Since they inherited the restaurant’s hot pot and Korean BBQ sides of the restaurant from Lee’s, Cindy, knowledgeable about Korean cooking, planned to take the lead on those menus, Chuck said at the time.
Chuck’s long-loved savory ramen dishes also appeared on the menu, including Tonkotsu, Shoyu, Creamy Chicken, and Tan Tan Men.
In June, fuji began rolling out their All You Can Korean BBQ as a weekday special all-day Monday through Friday, offering a unique dining option for the Pensacola area.
