BRIGHTON — The minds behind Nick’s Original House of Pancakes and Uptown Coney Island in Ann Arbor are partnering with a Dexter resident on a new brunch project in Brighton.
Fork & Spoon Brunch House will open in the coming weeks at 101 Brookside Lane, the former Lil’ Chef — which closed in June 2024 after more than five decades in business.
The new eatery comes from Zsofie Towne, Nick Panos and Costas “Gus” Boutsikakis. Panos is the longtime operator of Nick’s Original House of Pancakes, and Boutsikakis has run Uptown Coney Island since the 1990s.
Towne lives in Dexter and has roughly five years of restaurant experience. Fork & Spoon will be her first restaurant.
Towne is excited to provide a brunch spot in a busy city like Brighton, especially as a breakfast lover herself. She said Fork & Spoon will give families and friends an opportunity to spend quality time together over a good meal.
“For me, it’s all about giving great service to the community,” she said. “(I’m excited) for people to be able to come out and enjoy their meal and make meaningful connections.”
Customers can expect a “modern brunch restaurant built around fresh ingredients, classic flavors and a relaxed atmosphere,” according to the brand’s website.
The menu includes omelets, skillets, egg dishes, crepes, pancakes, waffles, salads, sandwiches and more. The business offers roughly 140 seats for dining, as well as catering and online ordering.
