Recipe of The Day – Grapefruit Sherbet

Yield: 2 gallons

Ingredients

  • 3 quart grapefruit juice, (about 12 grapefruits)
  • 2 quart water
  • 1/2 cup lemon juice
  • 2 quart sugar, (4 pounds)
  • 2 quart grapefruit, sections cut in pieces, (about 6 grapefruits)
  • 1 quart evaporated milk

Directions

  1. Combine grapefruit juice, water, lemon juice, sugar and grapefruit sections.
  2. Freeze to a mush in a 1:6 salt-ice mixture.
  3. Whip the evaporated milk, which has been thoroughly chilled, and add to the partially frozen mixture.
  4. Continue freezing until stiff.
