Outlaws restaurant from Hobbs expects Lubbock location to open soon

One of Hobbs, New Mexico’s most popular eateries has found a new home in Lubbock, promising to bring steak and seafood dishes with an Italian background.

A 2006 graduate of Le Cordon Bleu College of Culinary Arts in Minneapolis, Chef Johnny Robertson has multiple restaurants across New Mexico. This year, Robertson is bringing Outlaws, formerly Outlaw Grill of Hobbs, to Lubbock.

What is Outlaws Lubbock?

Robertson described Outlaws as a steak and seafood restaurant with an Italian background and some New Mexico fusion dishes. Some of the dishes’ names also match the outlaw theme, like the Jesse James tenderloin and the Sheriff’s Power Bowl. Robertson’s wife also came up with one of their popular dishes, Steph’s Symphony.

“A pasta dish my wife helped come up with when she was pregnant, it’s a cheesy sauce, topped with mozzarella, diced tomatoes, and crispy mango chicken,” Robertson said. “It’s tough to choose a favorite, because we have such a variety. We do everything from scratch.”

The menu also includes a green chile enchilada pasta, The Juicy Lucy cheese-stuffed burger and the OG Filet. Once a liquor license is obtained, Outlaws plans to have two full bars.

Where is Outlaws Lubbock?

The restaurant will open at the former El Mitote at 4525 Milwaukee Ave., Suite 600, in the Esplanade at City View shopping center.

“I expect them to do extremely well over there,” said Dr. Gurdev S Gill, a majority owner of the Esplanade at City View.

The restaurant started in 2011 in Eunice, New Mexico, then in 2021 in Hobbs. The landlord of the Hobbs property rented it out unexpectedly and told Outlaws to leave in 60 days, Robertson said.

“That same day, we saw this location online,” Robertson said. “We had 1,500 square feet in Hobbs and did $3.5 million in revenue last year. Here, we have five times the space.”

When is Outlaws Lubbock open?

Robertson hopes to open the restaurant as soon as possible, pending inspections and permits.
