Simply Vegan with Julius O. – Vegan Pancakes

We all (at times) try to eat better, right?! While some people make total lifestyle changes, others adjust their intake through baby steps.

In this series, we’re going to help you do the latter by introducing you to some simple and delicious vegan recipes that will be just as good to your palette as they are for your body.

Vegan Pancakes

Ingredients:

1 cup whole wheat flour; all-purpose flour is also fine
1 tablespoon baking powder 
1/4 teaspoon salt 
1 cup almond milk (or dairy-free milk of choice; I used soy milk) 
2 tablespoons olive oil or melted coconut oil 
2 tablespoons maple syrup or sugar of choice 
1 teaspoon pure vanilla extract 
more oil to grease your skillet/pan, if necessary

In a mixing bowl, whisk together the flout, baking powder and salt. In a 2-cup liquid measuring cup or another mixing bowl, whisk together the milk, oil, maple syrup (or sugar) and vanilla extract until thoroughly blended.

Pour the liquid mixture into the dry mixture. Stir until combined, so only a few lumps remain (you don’t want tough pancakes, so don’t over-mix the batter!) Let the batter rest for a few minutes so your pancakes will be nice and fluffy.

Heat a cast iron skillet or a nonstick griddle over medium-low heat. Once a drop of water sizzles on contact, your pan is hot enough to begin cooking.’

*optional* Lightly oil the cooking surface with additional oil or cooking spray.

Scoop the batter onto the skillet; cook for 2-3 minutes, until small bubbles form on the surface of the pancakes. Flip. Cook on the opposite side for 1-2 minutes, or until golden brown.

Repeat the process with the remaining batter, adding more oil as needed. Enjoy!
