COSHOCTON − If Kristie Henderson needs fresh onions or cilantro for a dish at the new Jolly Bee Sips and Treats food trailer, she just walks outside to a bucket garden.
She is elevating standard concession stand fare such as hot dogs and nachos at the mobile stand located at the Coshocton KOA Campground through Aug. 4.
Henderson joined the campground staff a few years ago and has a background in food service.
Signature offerings
One signature dish is the Bigfoot Hot Dog, which she said is similar to McDonald’s Big Mac. It’s an all beef, organic hot dog on a brioche bun with cheese, homemade relish and zesty sauce and sprinkled with sesame seeds.
Another staple are the Nature Trail Nachos, which features Ohio made tortilla chips, homemade béchamel cheese sauce, black bean salsa and cilantro grown at the campground. Henderson is a vegetarian and believes the layered nachos eats like a meal.
“I wanted it to fit in with Mother Nature and calling it Nature Trail is because I have seeds in it as well, which seeds are great for the protein,” Henderson explained.
For drinks, there is the passionfruit refresher with honey, coconut cold foam, topped with freeze dried strawberry crumbles, and the Campfire Cold Brew. That features a chocolate drizzle, smokey honey cold foam and toasted marshmallows. The coffee is brewed and stored in glass jars in the cold for 24 hours.
“We try to be healthy while still having ooey gooey. Having some sweetness with honey instead of sugar cane. Having agave instead of corn syrup. These options we put on the truck are just better for our bodies,” Henderson shared.
The Jolly Bee is open from noon to 2 p.m. Tuesdays, Thursdays and Saturdays from now through Aug. 4 at the Coshocton KOA Campground, 24688 County Road 10. Opening is weather dependent and offerings will change from time to time.
