Chroma changed hands multiple times before closing in 2025. What's next for Court St. spot

A new restaurant will soon be opening at the site of Chroma Cafe and Bakery in downtown Binghamton.

Just under a year after the cafe’s grand reopening, owner Leighton Blackwood said the “planned takeover didn’t meet” the team’s expectations, and the storefront closed in May in order to “transition into local farmers markets.”

The cafe was first opened on Chenango Street in 2012 by Heath and Nancy Hauptfleisch, before moving to its Court Street location in 2014.

The eatery then changed ownership in 2018 under Gerilyn and Kim Cummings before Blackwood reopened it in November 2024.

A new restaurant, originally located in Windsor, is taking over the space.

Here’s what to know about the Chroma transition.

Petunia’s to open at 97 Court St.

According to a Sept. 4 Facebook post, Petunia’s restaurant will be moving into the Chroma Cafe and Bakery location.

Petunia’s already has a restaurant in Windsor and, according to its Facebook page, the eatery offers “an eclectic menu of traditional, gluten-free, dye-free, non-dairy and vegan dishes.”

The menu features options including sandwiches, burgers, gyros, flatbread pizza and salads.

Blackwood said he is “glad to see that life will continue in that space.”

Chroma’s baked goods, including cinnamon rolls, mango pudding, tiramisu, and seasonal items, will be available for purchase at the Broome County and Binghamton farmers markets through the end of October. When the season ends, the baked goods will be available at Blackwood’s 2nd Heaven bubble tea shop located on the Binghamton University campus.

The anticipated opening date of the downtown Binghamton Petunia’s is Sept. 22, according to the restaurant’s Facebook post.
