A new lineup of tempting sweets stars in the daily afternoon-tea service at Café Boulud in Palm Beach.
Fashioned by head pastry chef Rosana Quintero, who joined the French-American restaurant this past winter, the confections now available at tea service include almond-and-citrus meringue tart and guava-and-passion fruit mousse.
Vanilla-and-caramel choux puff, plus a peanut marble cake, are among the other sweets served at the affair, which runs from 3 to 5 p.m.
Café Boulud began offering afternoon tea service in 2023.
In addition to sweets, afternoon tea ($78 a person) features scones with Devonshire cream and preserves, and dainty tea sandwiches such as cucumber, smoked salmon and ham with gruyere.
Specialty teas are served amid elegant table settings with teatime accessories. For an additional cost, sparkling wines and Champagne are available.
For the afternoon-tea goodies and all of her pastry work at Café Boulud, Quintero, a native of Venezuela who studied at Le Cordon Bleu in Miami, draws on an approach she describes as “clean, simple and flavor-driven.”
Trained in the techniques of French patisserie before working under master pastry chefs and chocolatiers, Quintero is known for blending classic techniques with bold flavors.
