Mud Lake Farm's sustainable growth, unique drinks in Hudsonville

“Holland In Photos,” a series shot by Sentinel photographer Adam Vander Kooy, highlights the extra-ordinary happenings of your neighbors.

HUDSONVILLE — It’s been more than 120 years since the property at 3411 Ottogan St. was purchased by the Van Haitsmas, but Mud Lake Farm continues to evolve.

What once served as a summer cattle pasture is now home to a growing line of teas, cordials, sodas and sparkling waters. The business grows many ingredients on-site and partners with local suppliers on the rest.

During a recent tour, owner Steve Van Haitsma showcased the plants, wildlife and growing practices that help define Mud Lake Farm. The property relies on beneficial insects and other sustainable methods of growth, rather than pesticides.

The farm’s drink lineup, sold under St. Steve’s Farm-Crafted Beverages, includes everything from elderflower soda to ginger beer to herbal teas. There are new flavors and products each year.

“If it’s native and edible, we grow it,” Van Haitsma said.
