Recipe of The Day – Frozen Cheese Salad

Yield: 50 servings

Ingredients

  • 1 quart evaporated milk
  • 1 cup lemon juice
  • 1 1/2 pound cream cheese
  • 2 cup Eggless Mayonnaise
  • 1 quart chopped dates
  • 1 quart drained crushed pineapple
  • lettuce, or watercress

Directions

  1. Chill milk thoroughly, then whip until stiff.
  2. Add lemon juice.
  3. Mash cheese.
  4. Add mayonnaise slowly, blending well, bold into whipped milk with the fruit.
  5. Pour into a mold and pack with ice and salt; or freeze in the trays of an automatic refrigerator.
  6. Serve on lettuce leaves or watercress, with or without salad dressing.
