Recipe of The Day – Baked Alaska

Yield: 8 – 12 servings

Ingredients

  • 1/2 nine inch square chocolate cake
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla
  • 1/2 cup sugar
  • 1 pint Neopolitan ice cream

Directions

  1. Cut chocolate cake in half.
  2. Place on a board or cookie sheet covered with paper.
  3. Beat the egg whites with the vanilla and cream of tartar until frothy.
  4. Add sugar gradually and continue beating until stiff and glossy (holds peaks when beater is removed).
  5. Place cooled cake on several thicknesses of wrapping paper on a board and pan.
  6. Cut neopolitan ice cream into 3 equal pieces and place on cake.
  7. Cover cake and ice cream with meringue.
  8. Make sure the ice cream is completely sealed in.
  9. Bake in very hot oven (500f) for 3 minutes, until meringue is delicately brown.
  10. Slip from board to platter.
  11. Serve at once.
