Yield: 8 – 12 servings
Ingredients
- 1/2 nine inch square chocolate cake
- 4 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla
- 1/2 cup sugar
- 1 pint Neopolitan ice cream
Directions
- Cut chocolate cake in half.
- Place on a board or cookie sheet covered with paper.
- Beat the egg whites with the vanilla and cream of tartar until frothy.
- Add sugar gradually and continue beating until stiff and glossy (holds peaks when beater is removed).
- Place cooled cake on several thicknesses of wrapping paper on a board and pan.
- Cut neopolitan ice cream into 3 equal pieces and place on cake.
- Cover cake and ice cream with meringue.
- Make sure the ice cream is completely sealed in.
- Bake in very hot oven (500f) for 3 minutes, until meringue is delicately brown.
- Slip from board to platter.
- Serve at once.
