Laura’s Scary Good Chili

As September arrives, so do thoughts of pumpkin spice everything, fall activities and CHILI!!  I have a repertoire of chili recipes, but this is one of my favorites—give it a try!  Intriguing ingredients put forth a spectacular result—enjoy!

2 LBS. Ground Chuck
1 LG. Spanish Onion Diced
1 LG. Bell Pepper Diced
1 28 oz. can Diced Tomatoes
1 28 oz. can Whole Tomatoes
2 40 oz. cans Tomato Sauce
1 Lime Juiced
1 12 oz. can beer
Salt and Pepper to taste
1 can Dark Red Kidney Beans
2 cans Pinto Beans
3 TBS. Hot Pepper Juice
1 TBS. Brown Sugar
2 TBS Cumin
1 Teas. Coriander
2 TBS. Granulated Garlic
2 TBS. Chili Powder

Brown ground beef with onions and peppers. Add all spices and hot pepper juice at this point. Then, add tomatoes and tomato sauce. Beer and lime juice come next. Lastly, add kidney beans and 1 can of pinto beans. Put the other can of pinto beans in the food processor until smooth. Add to mixture, simmer on low for 1 hour. Adjust salt and pepper to taste. Serve with oyster crackers and more beer. Top with shredded cheddar cheese, chopped onion, and sour cream as desired.
